การวิจัยเรื่อง สภาวะสุขาภิบาลอาหารของศูนย์อาหารแห่งหนึ่งในจังหวัดนนทบุรี เป็นการศึกษาแบบสำรวจ โดยเก็บข้อมูลจากร้านอาหาร 10 ร้าน มีการตรวจทางด้านกายภาพโดยใช้แบบตรวจร้านอาหารตามข้อกำหนดสุขาภิบาล และการตรวจทางด้านชีวภาพโดยใช้ชุดทดสอบ อ.13 ของกระทรวงสาธารณสุข พบว่า ข้อกำหนดที่ไม่ผ่านมากที่สุด คือ เรื่องน้ำแข็งที่ใช้บริโภค ต้องสะอาด เก็บในภาชนะที่สะอาด มีฝาปิด อยู่สูงจากพื้นอย่างน้อย 60 ซม ที่ตักน้ำแข็งมีด้ามยาว ต้องไม่นำอาหาร หรือสิ่งของอย่างอื่นไปแช่ไว้ในน้ำแข็ง และข้อกำหนดเรื่อง ผู้สัมผัสอาหารแต่งกายสะอาด สวมเสื้อมีแขน ผู้ปรุงต้องผูกผ้ากันเปื้อน และสวมหมวกหรือเน็ทคลุมผม ร้านอาหารไม่ผ่านเกณฑ์คิดเป็นร้อยละ 60 ส่วนข้อกำหนดที่ไม่ผ่านมากที่สุดเป็นอันดับ 3 เรื่อง ผู้สัมผัสอาหารที่มีบาดแผนที่มือ ต้องปกปิดแผลให้มิดชิด ร้านแผงลอยไม่ผ่านเกณฑ์คิดเป็นร้อยละ 50 ส่วนการตรวจทางด้านขีวภาพของร้านอาหารโดยใช้ชุดตรวจหาโคลิฟอร์มแบคทีเรียพบว่า ร้านที่ 1 9 และ 10 ไม่พบการเปื้อนโคลิฟอร์มแบคทีเรียนในตัวอย่างที่ทดสอบ โดยมีเพียง 3 ร้านที่มีผลการตรวจผ่านทางด้านกายภาพ 12 ข้อ และด้านชีวภาพผ่าน 10 ตัวอย่าง
The research was studied sanitary conditions a food center in Nonthaburi province, that data collection from 10 total food shops. Physical inspection was used sanitary survey form. Biological inspection was used coliform bacteria test kit from Health development. Ice was one of items found that coliform bacteria, therefore the criteria was not passed. Ice should be kept in clean container with a lid and at least 60 cm from the ground. Secondary, the food stores were not pass the health criterion about 60 percent of total food stores. The requirements for chef was dress clean, wear sleeves, apron and hat to prevent hairline that contaminated into food. Third, chef should be covering the wounded on hands. This item was not passed 50 percent of the total food stores. The results of biological inspection by coliform bacteria test kit were indicated food stores No.1, No.9 and No. 10 was not found contamination of coliform bacteria in samples. There were 3 food stores could be passed the physical inspections for 12 items and biological inspection for 10 samples.
