การพัฒนารูปแบบการจัดการเรียนรู้แบบมีส่วนร่วมของศูนย์การเรียนรู้และแปรรูปปลาสลิดของกลุ่มจังหวัดภาคกลางตอนกลาง ในตำบลคลองด่านจังหวัดสมุทรปราการ

Abstract

โครงการวิจัย การพัฒนารูปแบบการจัดการเรียนรู้แบบมีส่วนร่วมของศูนย์การเรียนรู้และแปรรูปปลาสลิด ของกลุ่มจังหวัดภาคกลางตอนกลาง ในตำบลคลองด่าน จังหวัดสมุทรปราการ มีวัตถุประสงค์เพื่อพัฒนารูปแบบการจัดการเรียนรู้แบบมีส่วนร่วม ที่เหมาะสมสำหรับศูนย์การเรียนรู้และแปรรูปปลาสลิดของกลุ่มจังหวัดภาคกลางตอนกลาง ในตำบลคลองด่าน จังหวัดสมุทรปราการ โดยการจัดสนทนากลุ่ม การสัมภาษณ์แบบเจาะลึก การสังเกต แจกแบบสอบถาม ใช้การสุ่มตัวอย่างแบบเฉพาะเจาะจงกับผู้ประกอบการ หรือเป็นผู้ที่ปฏิบัติงาน ในส่วนที่เกี่ยวข้องกับเกษตรกรผู้เพาะเลี้ยง พบว่าส่วนที่ 1 ผลสรุปจากการลงพื้นที่ ปัจจุบัน ชุมชนมีศูนย์การเรียนรู้ฯ มีห้องต่างๆ ดังนี้ ห้องโถง เพื่อจัดนิทรรศการ 1 ห้อง ขนาด 90 ตร.ม. โถงเอนกประสงค์ด้านหน้า ขนาด 108 ตร.ม. ห้องสำนักงาน (โถงด้านขวา) 1 ห้อง ขนาด 54 ตร.ม. ห้องประชุม (โถงเล็กส่วนกลาง) 1 ห้อง ขนาด 36 ตร.ม. ส่วนที่ 2 ผลสรุปจากแบบสอบถาม ผู้ตอบแบบสอบถามส่วนใหญ่เป็นเพศหญิง จำนวน 22 คน คิดเป็นร้อยละ 74 และเพศชายจำนวน 8 คน ร้อยละ 26 ผู้ตอบแบบสอบถามส่วนใหญ่อายุระหว่าง 41-50 ปี จำนวน 12 คน คิดเป็นร้อยละ 40 ส่วนใหญ่มีวุฒิการศึกษา ต่ำกว่าปริญญาตรี จำนวน 22 คน คิดเป็นร้อยละ 74 ความคิดเห็นการพัฒนารูปแบบการเรียนรู้ ศูนย์การเรียนรู้ฯ ทั้ง 6 ด้าน คือ ด้านบุคลากร ลำดับที่ 1 เจ้าหน้าที่ควรเป็นบุคคลในท้องที่ ค่าเฉลี่ย 4.88 ระดับมากที่สุด ด้านงบประมาณ ลำดับที่ 1 ควรได้รับงบประมาณจากทั้งจากภาครัฐและชุมชนในสัดส่วนที่เหมาะสม ค่าเฉลี่ย 4.76 ระดับมากที่สุด ด้านอาคารสถานที่ ลำดับที่ 1 ควรมีห้องเรียนรู้กลุ่มอาชีพ ค่าเฉลี่ย 4.98 ระดับมากที่สุด ด้านการบริหารจัดการและการส่งเสริมการเรียนรู้ ลำดับที่ 1 คณะกรรมการศูนย์ฯ ควรมาจากตัวแทนท้องถิ่น ค่าเฉลี่ย 4.86 ระดับมากที่สุด ด้านกระบวนการเรียนรู้ ลำดับที่ 1 ศึกษาดูงาน ค่าเฉลี่ย 4.91 ระดับมากที่สุด ด้านสื่อการเรียนรู้ ลำดับที่ 1 คลิปวิดีโอ ค่าเฉลี่ย 4.70 ระดับมากที่สุด ส่วนที่ 3 ผลสรุปตามวัตถุประสงค์ พบว่า 1. รูปแบบการจัดการเรียนรู้ ควรเน้นปฏิบัติมากกว่าบรรยาย ได้แก่ การสาธิต วิทยากรนำชม การทดลอง เป็นต้น 2. สื่อที่ใช้ในการจัดการเรียนรู้ ได้แก่ หนังสือ โบว์ชัวร์ โทรศัพท์ มือถือ ตู้จัดแสดง เป็นต้น 3. องค์ความรู้ ได้แก่ การเพาะเลี้ยง วิธีเลี้ยง กรรมวิธีในการแปรรูป เป็นต้น 4. สิ่งที่เขาอยากรู้ ได้แก่ กระบวนการเพาะเลี้ยงปลาสลิด สายพันธุ์ วิธีทำ วิธีใส่ เกลือปลาเค็มส่งนอก การแปรรูปเครื่องมือ เป็นต้น รูปแบบการจัดการเรียนรู้ทั้ง 8 หัวข้อสาระ ได้แก่ หัวข้อที่ 1 การสร้างอัตลักษณ์การเพาะเลี้ยงปลาสลิดบางบ่อแบบครบวงจร หัวข้อที่ 2 การใช้งานและเข้าร่วมกลุ่มสื่อออนไลน์ เพื่อส่งเสริมการตลาดและสนับสนุนการเพาะเลี้ยง และแปรรูปปลาสลิตบางบ่อ หัวข้อที่ 3 การผลิตตู้อบแห้งปลาสลิดต้นทุนน้อย หัวข้อที่ 4 การผลิตภัณฑ์(ฉีด/พ่น)ไล่แมลงวันจากกาบใบตะไคร้ (สมุนไพร่ไทย) หัวข้อที่ 5 การออกแบบบรรจุภัณฑ์และตราสัญลักษณ์เพื่อเพิ่มมูลค่าผลิตภัณฑ์ปลาสลิดแปรรูป หัวข้อที่ 6 การเขียนแผนธุรกิจเพื่อเพิ่มมูลค่าผลิตภัณฑ์ปลาสลิดแปรรูป หัวข้อที่ 7 การดูแลสุขภาพและการป้องกันพฤติกรรมภาวะเสี่ยงจากการเพาะเลี้ยงและแปรรูปปลาสลิด หัวข้อที่ 8 การแปรรูปปลาสลิดแดดเดียวตามเกณฑ์มาตรฐานคุณภาพอาหารของหน่วยงานรับรอง มหาวิทยาลัยหัวเฉียวเฉลิมพระเกียรติ มุ่งสู่มาตรฐานผลิตภัณฑ์ชุมชน (มผช.)

The purpose of this research is to develop the learning design with the participation appropriate for the learning center and Gourami fish processing in the provinces of central Thailand in Klong-Dan district, Samutprakarn. The methods used were a group discussion, an in-depth interview, an observation, and questionnaire. Moreover, the samples were purposively selected, especially from those who were related with the respective participants in the industry. It was found that 1) from field work, the result was that at present, the community has a learning center with the building of a big hall for an exhibition sizes 90m2, a hall for multi-purpose activities sizes 108m2, an office on the right sizes 54m2, and a meeting room (the central hall) sizes 36m2 ; 2) from the questionnaire, the result was that most respondents were 22 females, which was 74% and 8 males, which was 26%. According to age, the most respondents aged 41-50 years were 12 people, which was 40%, 22 with qualification below bachelor's degree , which was 74%. The opinion on the development of the six elements of the learning center were as follows: the personnel of the organization should be from local representatives at the average of 4,88, the budget should be from both the government sector and the community with the appropriate proportion at the average of 4.76, for the building, there should be a room for an occupational group, at the average of 4.98, for the management and learning enhancement, the committee of the center should be from the local representatives, at the average of 4.86, for the learning processes, a field trip or study trip should be provided, at the average of 4,91, for the instructional media, video clips should be provided, at the average of 4.70; 3) form the conclusion of the objectives, it was found that the learning management should be an emphasis on other techniques rather than lectures, for example, a demonstration, a guest speaker, and an experiment; teaching materials should be texts, brochures, smart phones, and an exhibit cabinet; for knowledge, it should be culturing, farming procedures, and processing methods; what they want to know were farming procedures of gourami, breeding, preservation, salt curing or salting, food processing, and handyman tools. Eight utilization managements include: identity construction of A One-Stop-Service Gourami Culture; a mobile application and social media to enhance marketing, culturing and fish processing of Bang-bor Gourami; the creation of a cheap drying cabinet; the production of insect repellent from lemon grass; packing design and symbol to add more value of Gourami processing; health prevention and risk from culturing and processing; and making sun dried gourami under the standard of the organization which guarantees the quality of the products, Huachiew Chalermprakiet University, focusing on the community standard production (MPC).
