วัฒนธรรมอาหารท้องถิ่นในรายการโทรทัศน์ "ภัตตาคารบ้านทุ่ง" พ.ศ. 2561

Abstract

งานวิจัยนี้มีวัตถุประสงค์เพื่อวิเคราะห์วัฒนธรรมอาหารท้องถิ่นของคนไทยในรายการโทรทัศน์ "ภัตตาคารบ้านทุ่ง" พ.ศ. 2561 จำนวน 50 ตอน ซึ่งบันทึกในเว็บไซต์ของสถานีวิทยุโทรทัศน์ไทยพีบีเอส และนำเสนอผลการวิจัยแบบพรรณนาวิเคราะห์ ผลการวิจัยพบว่าเนื้อหาและภาพของรายการโทรทัศน์ "ภัตตาคารบ้านทุ่ง" นำเสนอเรื่องวัฒนธรรมอาหารท้องถิ่น 4 ภูมิภาค แสดงให้เห็นวิถีชีวิตที่พึ่งพาสิ่งแวดล้อมธรรมชาติเป็นแหล่งอาหารและการดำรงชีวิต สะท้อนให้เห็นความสัมพันธ์ในครอบครัวและในชุมชน การประกอบอาชีพ ความเชื่อเรื่องผีบรรพบุรุษ ความเชื่อเรื่องการบริโภคอาหารและอาหารท้องถิ่นในประเพณีสงกรานต์ ทำให้เห็นความสามัคคี ความมีน้ำใจ ความขยันหมั่นเพียร ภูมิปัญญาการถนอมอาหาร การใช้ภาษาถิ่นและสำนวนภาษา ซึ่งเป็นเอกลักษณ์ทางวัฒนธรรมของคนไทยแต่ละภูมิภาค

This research aimed to analyze Thai culture relating to local food presented in the television program called Bantung Restaurant, broadcasted in 2018 A.D. through Thai PBS television channel and restored in its website. Fifty episodes were studied. The findings were reported as a descriptive analysis. It was found that the contents and pictures of Bantung Restaurant program had presented the local food culture of four regions of Thailand. They showed Thai ways of living that depended on natural environment as food supplies and living supports. The program had reflected relationships in families and communities; people's professions; beliefs of ancestral spirits; beliefs of food consumption; and local food in Songkran tradition. These conveyed to Thai characteristics of unity, compassion, diligence, wisdom of food preservation, and usage of dialect and phrases which were cultural identities of each local Thas.
