การศึกษาครั้งนี้มีวัตถุประสงค์เพื่อตรวจวัดปริมาณจุลินทรีย์ในผลไม้สดตัดแต่งที่จำหน่ายใน มหาวิทยาลัยหัวเฉียวเฉลิมพระเกียรติและบริเวณใกล้เคียง ตัวอย่างผลไม้สดตัดแต่งได้แก่แอปเปิ้ลแดง มะม่วง สับปะรด มะละกอ และแคนตาลูป รวมจำนวน 25 ตัวอย่าง ถูกเก็บรวบรวมจากร้านจำหน่ายใน มฉก. (6 ตัวอย่าง) และร้านจำหน่ายบริเวณใกล้เคียง มฉก. (19 ตัวอย่าง) ทำการตรวจวัดปริมาณจุลินทรีย์ทั้งหมดด้วยวิธี Total plate count ปริมาณโคลิฟอร์มแบคทีเรียด้วยวิธี Most probable number method และตรวจสอบ E. coli ด้วยวิธีการ ทดสอบคุณลักษณะทางชีวเคมี ผลการศึกษาพบว่าตัวอย่างส่วนใหญ่มีปริมาณจุลินทรีย์ทั้งหมดผ่านตามเกณฑ์ มาตรฐานทางจุลชีววิทยา คิดเป็น 76.0% โดยแคนตาลูปมีปริมาณจุลินทรีย์ทั้งหมดสูงสุด เท่ากับ 1.33×109 CFU/g นอกจากนี้ ตัวอย่างยังมีการปนเปื้อนโคลิฟอร์มแบคทีเรียทั้งหมด ฟีคัลโคลิฟอร์มแบคทีเรีย และ E. coli คิดเป็น 92%, 88% และ 64% ตามลำดับ ปริมาณ E. coli ของทุกตัวอย่างผ่านตามเกณฑ์มาตรฐานทางจุลชีววิทยา มี ปริมาณในระดับน้อยอยู่ระหว่าง 3.6-14 MPN/g ผลการศึกษายังพบว่าสายพันธุ์ของ E. coli ส่วนใหญ่ ที่พบใน ตัวอย่างผลไม้สดตัดแต่ง เป็นไบโอไทป์ II สายพันธุ์สิ่งแวดล้อม คิดเป็น 87.5% มีเพียง 12.5% ของไอโซเลท ทั้งหมด เป็นไบโอไทป์ I สายพันธุ์ก่อโรค จากผลการประเมินสุขาภิบาลอาหารของร้านจำหน่ายผลไม้พบว่า ร้านจำหน่ายผลไม้มหาวิทยาลัยหัวเฉียวเฉลิมพระเกียรติจำนวน 2 ร้าน มีสภาวะสุขาภิบาลอยู่ในระดับดี ส่วนร้านจำหน่ายผลไม้บริเวณใกล้เคียงจำนวน 4 ร้าน อยู่ในระดับควรปรับปรุง โดยตัวอย่างผลไม้ที่ไม่ผ่านเกณฑ์ มาตรฐานจุลชีววิทยาด้านจุลินทรีย์ทั้งหมดมาจากร้านจำหน่ายผลไม้บริเวณใกล้เคียง มฉก.
The objective of this study was to determine the quantity of microorganisms in fresh cut fruits sold in Huachiew Chalermprakiet University and the vicinity. Twenty-five samples of fresh-cut fruits i.e. red apples, mangoes, pine apples, papayas, and cantaloupes were collected from the vendors of Huachiew Chalermprakiet University (6 samples) and the vicinity (19 samples). Total microorganism count was measured by total plate count method, and the number of coliform bacteria was assessed by most probable method. Moreover, biochemical characteristic tests verified of E. coli were investigated. The results found that total microorganism counts of the most sample were accepted to the microbiological standard for 76.0%. Cantaloupes showed the highest of total microorganism count for 1.33×109 CFU/g. Besides, total coliform bacteria, fecal coliform bacteria and E. coli contaminations were also presented in samples for 92%, 88% and 64%, respectively. Numbers of E. coli in all samples were accepted to the microbiological standard at low number of 3.6-14 MPN/g. The results also showed that the most of E. coli found in fresh-cut fruits were biotype II environmental strains for 87.5%. Only 12.5% of the isolates were biotype I pathogenic strains. According to the evaluation of fresh-cut fruit vendors on food sanitary, two vendors of HCU were good sanitary condition level. While sanitary condition level of four vendors of the vicinity were poor with need for improvement.
