การวิจัยครั้งนี้มีวัตถุประสงค์ เพื่อนำเสนอแนวทางการส่งเสริมการท่องเที่ยวเชิงอาหารอย่างสร้างสรรค์ผ่านกระบวนการวิจัยเชิงคุณภาพโดยเก็บรวบรวมข้อมูลด้วยการสำรวจภาคสนามการสังเกต การสัมภาษณ์เชิงลึก และสนทนากลุ่ม ผลการวิจัย พบว่า แนวทางการส่งเสริมการท่องเที่ยวเชิงอาหารอย่างสร้างสรรค์ สำหรับชุมชนลาวเวียงม่วงงามสามารถดำเนินการในด้านต่างๆ ต่อไปนี้ 1) การส่งเสริมการท่องเที่ยวเชิงอาหารอย่างสร้างสรรค์ที่สอดคล้องกับบริบทของชุมชนเกษตรกรรมในรูปแบบการท่องเที่ยววิถีชาวนาที่มีความโดดเด่นของการเป็นพื้นที่ปลูกข้าวเจ๊กเชยเสาไห้ที่ได้รับการขึ้นทะเบียนเป็นสิ่งบ่งชี้ทางภูมิศาสตร์ (Geographical Indication : GI) 2) การสร้างสรรค์กิจกรรมการท่องเที่ยวใหม่ๆที่สอดคล้องกับฤดูกาลหรือเทศกาลต่างๆ และควรเป็นกิจกรรมการท่องเที่ยวที่เหมาะสมกับกลุ่มเป้าหมายที่ประกอบด้วย กลุ่มนักเรียน นักศึกษา กลุ่มศึกษาดูงาน และกลุ่มครอบครัว 3) ด้านการสร้างมูลค่าเพิ่มผลิตภัณฑ์อาหารท้องถิ่น จากการออกแบบและพัฒนาผลิตภัณฑ์อาหารที่เกี่ยวเนื่องกับข้าวเจ๊กเชยเสาไห้และแสดงถึงอัตลักษณ์ของชาติพันธุ์ลาวเวียง 4) ด้านการพัฒนาบุคลากรด้านการท่องเที่ยวของท้องถิ่นในกลุ่มเยาวชนให้เข้ามามีส่วนร่วมในการจัดการการท่องเที่ยว 5) ด้านการประชาสัมพันธ์และการตลาดเพื่อส่งเสริมการท่องเที่ยวผ่านสื่อออนไลน์อย่างต่อเนื่องเพื่อให้แหล่งท่องเที่ยวเป็นที่รู้จักมากขึ้น 6) ด้านสุขลักษณะและความปลอดภัยของอาหารท้องถิ่น รวมทั้งการให้บริการที่เป็นมาตรฐาน เพื่อให้เกิดการขับเคลื่อนทรัพยากรการท่องเที่ยวผ่านอัตลักษณ์ของกลุ่มชาติพันธุ์ทางด้านอาหาร วิถีชีวิต และวัฒนธรรมที่สามารถกระตุ้นเศรษฐกิจฐานรากของชุมชนวิถีเกษตร และเกิดการอนุรักษ์ทรัพยากรข้าวที่เป็นเอกลักษณ์ของท้องถิ่นอย่างยั่งยืน
This study aims to initiate guidelines for the promotion of creative gastronomy tourism in Lao Vien Muang Ngam community. The qualitative research method is employed by collecting data through field study, observations, in-depth interviews and focus group discussion. The results indicate that 1) ethnic Lao Vien in Muang Ngam should promote creative gastronomy tourism as an agricultural community, in the form of farm tourism that has the distinction of being a location for planting “Jek Chuey Sao Hai Rice” registered as a geographical indication (GI); 2) new tourism activities that relate to the seasons or festivals should be created. In addition, tourism activities should be designed to suit their target groups consisting of students, study groups and family groups; 3) develop value creation for the design and development of local food products related to “Jek Chuey Sao Hai Rice” and present the identity of ethnic Lao Vien; 4)initiate the development of local personnel in youth groups to participate in tourism management; 5) develop public relations and marketing strategies to continuously promote tourism through online media to ensure the attraction becomes widely known; 6) develop a health and safety strategy for local food products, including standardized service to drive tourism through traditional ethnic identity in food, lifestyle and local culture, resulting in stimulating the agricultural community economy, and generating sustainable conservation of rice products that are unique resources of the community.
