ศึกษาผลของน้ำสมุนไพรจากดอกกระเจี๊ยบแดง (Hibiscus sabdariffa) ดอกคำฝอย (Carthamus tinctorius) และดอกอัญชัน (Clitoria ternatea) ในการยับยั้งการเจริญของเชื้อแบคทีเรียก่อโรคทางเดินอาหาร Escherichia coli O157:H7, Listeria monocytogenes และ Salmonella Typhimurium และผลของน้ำสมุนไพรต่อการเจริญของแบคทีเรียกรดแลคติก Lactobacillus acidophilus, Lactobacillus casei และ Lactobacillus lactis เพาะเชื้อลงในนมโคที่เติมน้ำสมุนไพรแต่ละชนิดความเข้มข้นร้อยละ 20 นับจำนวนเชื้อที่ระยะเวลา 0, 24, 48 และ 72 ชม. พบว่านมที่เติมน้ำสมุนไพรสามารถทำให้แบคทีเรียกรดแลคติกเพิ่มขึ้น 2-3 logs CFU/mL ซึ่งมากกว่านมที่ไม่มีการเติมน้ำสมุนไพร นมผสมน้ำดอกกระเจี๊ยบแดง สามารถลดจำนวนเชื้อ Escherichia coli O157:H7 2.3 logs CFU/mL และยับยั้งการเจริญของเชื้อ Listeria monocytogenes และ Salmonella Typhimurium สำหรับนมผสมน้ำดอกอัญชัน สามารถลดจำนวนเชื้อ Escherichia coli O157:H7 1.4 logs CFU/mL และยับยั้งการเจริญของเชื้อ Salmonella Typhimurium ในขณะที่นมผสมน้ำดอกคำฝอยไม่สามารถยับยั้งการเจริญของเชื้อก่อโรคทุกชนิดได้ ผลการวิจัย แสดงให้เห็นว่าน้ำสมุนไพรทั้ง 3 ชนิด มีผลส่งเสริมการเจริญของเชื้อแบคทีเรียแลคติกได้ แต่มีเพียงน้ำดอกกระเจี๊ยบแดงที่สามารถยับยั้งการเจริญของเชื้อแบคทีเรียก่อโรคทางเดินอาหารได้ทั้ง 3 ชนิด จึงมีศักยภาพที่จะนำมาพัฒนาเพื่อใช้เป็นสารต้านจุลชีพจากธรรมชาติเพื่อความปลอดภัยของอาหาร
Water extracts from three herbs roselle (Hibiscus sabdariffa), safflower (Carthamus tinctorius) and butterfly pea (Clitoria ternatea) were tested for inhibition effect against foodborne bacterial pathogens Escherichia coli O157:H7, Listeria monocytogenes and Salmonella Typhimurium and growth promotion effect to lactic acid bacteria Lactobacillus
acidophilus, Lactobacillus casei and Lactobacillus lactis. Twenty percent (v/v) of Herb extracts were mixed with milk then inoculated with each bacterium. Bacterial density was counted at 0, 24, 48 and 72 hours after inoculation. It was found that all herbs could promote growth of lactic acid bacteria by 2-3 logs CFU/mL which was higher than milk without herb (control). Milk with roselle reduced the growth of Escherichia coli O157:H7 by 2.3 logs CFU/mL and also reduced growth of Listeria monocytogenes and Salmonella Typhimurium. Milk with butterfly pea inhibited growth of Escherichia coli O157:H7 by 1.4 logs CFU/mL and also inhibited Salmonella Typhimurium. On the other hand, milk with safflower had no inhibitory effect to all pathogens. In summary, all 3 herb extracts had the ability to promote growth of lactic acid bacteria but only roselle could inhibit all 3 species of foodborne bacterial pathogens. Hence, roselle has potential to be used as a promising natural antimicrobial for food safety.
