การศึกษาการปนเปื้อนของจุลชีพในกุ้งฝอย ในพื้นที่ตลาดสดอำเภอบางบ่อ จังหวัดสมุทรปราการ โดยมีวิธีการตรวจหาการปนเปื้อนของพยาธิและเชื้อแบคทีเรีย จากการตรวจหาพยาธิโดยใช้กล้องจุลทรรศน์ใช้แสงแบบสเตอริโอ ไม่พยาธิภายในกุ้งฝอย และจากการย่อยด้วยเอนไซม์ pepsin พบสิ่งที่มีลักษณะคล้ายหนอนมีรูปร่างทรงกระบอก มีสีขาวจาง การศึกษาลักษณะทางจุลกายวิภาคบริเวณส่วนหัวของกุ้งฝอยและย้อมด้วยสี Hematoxylin and Eosin ไม่พยาธิในเนื้อเยื่อตัวอย่างกุ้งฝอยและในการศึกษาการปนเปื้อนของเชื้อแบคทีเรีย พบการปนเปื้อนของเชื้อแบคทีเรีย แกรมบวก รูปร่างกลมและแท่ง ข้อมูลจากการศึกษานี้แสดงให้เห็นว่าตัวอย่างกุ้งฝอยมีการปนเปื้อนของเชื้อแบคทีเรียซึ่งอาจก่อให้เกิดอันตราย อย่างไรก็ตามการตรวจสอบยืนยันชนิดของสิ่งที่พบ จากวิธีการย่อยด้วยเอนไซม์และการจำแนกชนิดของเชื้อแบคทีเรียที่ปนเปื้อนในตัวอย่างกุ้งฝอยจะเป็นประโยชน์ต่อผู้บริโภคและเป็นข้อมูลเบื้องต้น ในการศึกษาการปนเปื้อนของจุลชีพในกุ้งน้ำจืดต่อไป
The objective of the study was to study any microorganism contamination of Macrobrachium Lanchesteri at Bang Bo fresh market. A stereoscopic microscope was used to confirm any parasite of bacteria contamination. The flesh of sample shrimp was dissolved in pepsin and then observed under a microscope and cylindrical-shaped material were discovered. Histological technique was used to analyze shrimp heads and while there was no presence of parasite, Gram-positive bacteria with rod and cocci shape was discovered. From the study, it can be seen that Macrobrachium Lanchesteri have some bacteria contamination which may cause disease. Further study is required to confirm the material found in the shrimp flesh and confirmation of the variety of gram-positive bacteria before any conclusions concerning consumer safety can be made.
