วัฒนธรรมและบทบาทของอาหารจีนแต้จิ๋วที่มีต่อวิถีชีวิตของชาวจีนย่านเยาวราช

Abstract

บทความนี้มีวัตถุประสงค์เพื่อศึกษาวัฒนธรรมและบทบาทของอาหารจีนแต้จิ๋วในวิถีชีวิตชาวจีนย่านเยาวราช ซึ่งเป็นงานวิจัยเชิงคุณภาพ โดยใช้วิธีเก็บข้อมูลภาคสนามจากการสัมภาษณ์แบบเจาะลึกจากคนไทยเชื้อสายจีนแต้จิ๋วที่อาศัยอยู่ในตลาดเก่าเยาวราชและบริเวณใกล้เคียง จำนวน 40 คน โดยได้ศึกษาข้อมูลจากเอกสาร การสังเกตการณ์ และนำเสนอผลการวิจัยแบบพรรณนาวิเคราะห์ ผลการวิจัยพบว่า วัฒนธรรมอาหารจีนแต้จิ๋วที่อยู่ในวิถีชีวิตมี 2 ประการ ประการที่หนึ่งอาหารจีนแต้จิ๋วในชีวิตประจำวัน คือ 1) อาหารที่ทำกินในบ้าน มีลักษณะเรียบง่าย เมนูอาหารสืบทอดจากบรรพบุรุษ 2) อาหารแต้จิ๋วร้านริมทาง เป็นสูตรแต้จิ๋วที่ปรุงเฉพาะ ถือเป็นการเผยแพร่วัฒนธรรมอาหารให้กับผู้บริโภค 3) อาหารแต้จิ๋วร้านนั่งรับประทาน เป็นสูตรแต้จิ๋วโบราณมีราคาแพง ประการที่สอง วัฒนธรรมอาหารแต้จิ๋วในเทศกาลงานประเพณี คือ 1) อาหารแต้จิ๋วในวันตรุษจีน วันไหว้บรรพบุรุษ วันไหว้บ๊ะจ่าง วันไหว้พระจันทร์ และเทศกาลกินเจ นิยมใช้อาหารมงคลที่สื่อถึงความสุข ความร่ำรวย 2) อาหารแต้จิ๋วในโอกาสสำคัญ ได้แก่ วันเกิด วันแซยิด และวันขึ้นบ้านใหม่ นิยมทำอาหารเป็นทรงลูกท้อเพื่อให้มีอายุยืนยาว และด้านบทบาทมี 3 ประเด็น คือ 1) ด้านการดำรงชีวิต ชาวจีนแต้จิ๋วนิยมปรุงอาหารด้วยเครื่องยาจีนจึงทำให้เป็นอาหารสุขภาพ 2) ด้านเศรษฐกิจอาหารแต้จิ๋วช่วยส่งเสริมอาชีพในชุมชนเพราะนำไปใช้ในงานประเพณีต่างๆ จึงทำให้ตลาดเก่าเยาวราช กลายเป็นแหล่งท่องเที่ยวเชิงวัฒนธรรมอาหารแต้จิ๋วในปัจจุบัน 3) ด้านการเผยแพร่และรักษาวัฒนธรรม มีการเผยแพร่โดยผ่านสื่อต่างๆ จึงเกิดการอนุรักษ์อาหารแต้จิ๋วให้คงอยู่ในสังคมไทยสืบไป

This article had the objectives to study the culture and roles of Teochew food in the life of Thai-Chinese in Yaowarat area. This research was the qualitative research by collecting data from deep interview with 40 Thai-Teochew peoples living in old market, Yaowarat and nearby areas as well as studying the documentation and observation. The research's result was presented in descriptive analysis. The research found that Teochew food culture in the life of Chinese in Yaowarat area had 2 points. Firsty, Teochew food in daily life was following. 1) Home-made food had a simple style and the food menus was inherited form ancestors. 2) Teochew food from food stalls was special Teochew recipe which was a way to convey the Teochew food culture to customers. 3) Teochew food in restuarants was the authentic Teochew recipe with luxury and expensive price. Secondly; Teochew food culture in food festivel were following 1) During Chinese New Year, Ancestor worship day, Dragon Boat Festival, Mid-Autumn Day and Vegetarian Festival, it was to use of auspicious food conveying the happiness and prosperity. 2) Teochew food during important occasions such as birthdays, sixtieth birthdays and housewarming days was made in peach shape for longevity. There were 3 roles of Teochew Food. 1) Teochew food role in way of life, Teochew Chinese people like to cook with Chinese medicein making it a healthy food. 2) For the economic role, Teochew food promoted the careers in the community because Teochew food was used in various traditions which made Old market, Yaowarat becoming Teochew food cultural tourism destinaation. Lastly, 3) it had a role to disseminate and preserve the culture. There was the publication through variouss channel which therefore created the Teochew food preservation keeping Teochew food in Thai society.
